The Pétale de Rose is one of the first pale rosés, light salmon coloured, of the Provence. Colour is pale rose petal. Nose is delicate, offering ripe strawberry and nectarine aromas, flowery notes. Flavours are intense, pungent with lots of liquorice and pink pepper melting into the sweet fruitiness of strawberry and peach.

Description & facts
The Pétale de Rose is one of the first pale rosés, light salmon coloured, of the Provence. Colour is pale rose petal, with gentle silvery hues.
Nose is delicate, offering ripe strawberry and nectarine aromas, flowery notes such as peony, some orange blossom,
intertwined with tangerine peel, some aniseed and liquorice coming along with a subtle smoky, but airy sensation.
Palate is dry and mellow, caressing with satin-like texture, medium plus acidity and generous zests giving spiciness.
Flavours are intense, pungent with lots of liquorice and pink pepper melting into the sweet fruitiness of strawberry and peach.
Finish is long, with noble balsamic bitterness, offering a slightly tannic touch, and thus a certain structure.
Great with food, can keep well for the next 1-2 years.

- Vinification
- De wijngaarden worden met de hand bewerkt met natuurlijke dierlijke meststoffen. De toppen worden bijgesneden en een groene oogst is de praktijk om de opbrengsten doelbewust te beperken. Een deel van de wijngaard wordt geploegd met paarden. Het gebied tussen de rijen wijnstokken is begroeid met granen. Alle druiven worden handmatig geoogst, gesorteerd, niet ontsteeld en direct in een hydraulische Champenois Coquard pers geladen zonder te pletten. De druiven worden licht geperst om een optimale delicatesse en geur te verkrijgen vanuit het hart van de druiven. Wijnen fermenteren in temperatuurgecontroleerde roestvrijstalen, zwaartekrachtgevoede vaten. De Pétale de Rose wordt uitsluitend gemaakt 1e kwaliteit sappen. De wijn ondergaat malolactische gisting. We used 50% native yeasts for the fermentation and we aim to do 100% for the next vintage. De wijn wordt gebotteld in het Château la Tour de l'Evêque.

- In de heuvelachtige vallei van de Maurettes bestaat het land Schisteux van de Phyllades de Hyères uit leisteen afkomstig uit Siluurlagen en Perm rode zandsteen. De wijnstokken van 78 hectare zijn gemiddeld twintig jaar oud.
