Tasting note
Pale colour with salmon tints. Nose of red berries and “garrigue” spiciness. Generous fruit and herbal tones on the palate. Highly intense and refreshing with a long finish.

Vinification
A premium vinification process : no over-ripeness, direct pressing at low pressure, contact with the lees from the must (5 days), cold settling, alcoholic fermentation in stainless steel tanks with temperature control

Soil
The vines benefit from a mosaic of soils: from the marl and chalky clay keeping moisture for a nice aromatic freshness to limestone gravels and red clay with pebbles giving a riper fruit character. Two different climate zones complement each other: Puichéric area, East of Carcassonne, tempered by an oceanic influence and exposed to Tramontane, strong North-West wind; and Ensérune, West of Béziers, with a hot and dry Mediterranean climate
