Mercurey was named after the Roman temple built here to honor the god Mercury. With 650 ha (1606 acres), 85 "village" vineyards and 32 Premier Crus, Mercurey is the largest of the Côte Chalonnaise’s appellations. In 2005, Albert Bichot’s estates spread to the Chalonnaise slopes, with the creation of "Domaine Adélie" with more than 4 ha (9.8 acres) in the Mercurey appellation. This vineyard faces south. The wine’s finesse tempers all of the power this terroir could have.

Description & facts
Domaine Adélie, part of Albert Bichot, is located in the Côte Chalonnaise village of Mercurey. Its 7,8 hectares of vines are divided among different plots that produce delectable, rich red wines and subtle, elegant whites. The estate is named after Albéric Bichot’s daughter who was born in 2003, further anchoring the Bichot family’s roots in Burgundy from generation to generation. Respect for the terroir and for nature is essential for us. We practice sustainable and organic viticulture. Starting with the 2018 vintage, the wines of Domaine Adélie bear the certified “organic wine” label.

- This Mercurey Premier Cru "Champs Martin" is fresh, fine and fragrant. Slightly oaked notes complement black fruit aromas on the nose, along with scents of violet, blueberry, blackberry and liquorice. Fleshy and velvety on the palate with flavors of strawberry and vanilla. Highly aromatic finish.

- Vinification
- The grapes are handpicked and ferments in temperature-controlled conical oak vats for 20 to 25 days. After that wine ages for 14 to 16 months in oak barrels of which 20-35% new.
