Description & facts
Domaine du Pavillon, part of Albert Bichot, is located south of Pommard, in the Côte de Beaune. The vineyards, winery, cellar, and 18th-century manor are surrounded by a wall. The estate’s 15 hectares of vines include nearly 4 hectares of our monopole Pommard "Clos des Ursulines". Just as at Domaine du Clos Frantin in Nuits-Saint-Georges, we practice organic viticulture with ongoing concern for the respect of the complex balances found in nature. The winery was modernized in 2016, so that we could vinify more of the Côte de Beaune’s single vineyards, in vats of varying sizes that are perfectly adapted to the single vineyard approach that is typical in Burgundy. As for the other Côte-d'Or and Mercurey estates, the wines of the Pavillon will bear the certified “organic wine” label, starting with vintage 2018.

- This Meursault is bright, luminous straw yellow in color. The nose boasts a discrete touch of toast followed by elegant floral notes underpinned by fruity, light plum and pear aromas. The palate is powerful, well balanced and dense, with delicious flavors of brioche. The finish is long and very aromatic.

- Vinification
- The wine is vinified in thermoregulated tanks and oak barrels (35%) in 3 to 8 weeks. The wine then ages for a period of 12 to 15 months on oak barrels, of which 20% new.

- The grapes come from 5 plots with different but complementary characteristics on east / south - east exposure on a 235m gentle slope.
