- Tasting note
- A refreshing brut champagne made from Pinot Noir (65%) and Chardonnay (30%) from old vines from 1er Cru areas Mareuil sur Ay & Bisseuil 1er cru. This Premier Cru champagne is intensely herbal in a positive way, redolent of mint and eucalyptus that convey a cooling and cleansing aura to its texturally polished palate. Also nice fresh fruit aroma's from apple and pear with a mouthwaterlingly sweet savor and sense of richness in a persistently juicy, chalk-kissed finish.
- Wine-food combination
- A widely applicable Champagne that can handle both an aperitif and a wide variety of dishes. Both beautiful with seafood, but also with richer fish dishes from sushi to rich fish such as sea bass.
- Vinification
- The harvest is done manually and then the vertical press membrane, "Cœur de cuvée" follows. The wine ferments on stainless steel. After bottling with liqueur de tirage the bottles age for 3 years in cellar before the disgorgement.
