Beaune, the historic capital of Burgundy wines, is also a vineyard where there are many famous premier crus, with very varied characteristics. Among them, the "Les Bressandes" climate, which, by its geological nature, particularly emphasizes the elegant and fine aspect of Pinot Noir. Its toponymic origins may just as well come from a link with the region of Bresse and its inhabitants, as from the presence of brush, which could have been observed there in the past.

Description & facts
Domaine du Pavillon, part of Albert Bichot, is located south of Pommard, in the Côte de Beaune. The vineyards, winery, cellar, and 18th-century manor are surrounded by a wall. The estate’s 15 hectares of vines include nearly 4 hectares of our monopole Pommard "Clos des Ursulines". Just as at Domaine du Clos Frantin in Nuits-Saint-Georges, we practice organic viticulture with ongoing concern for the respect of the complex balances found in nature. The winery was modernized in 2016, so that we could vinify more of the Côte de Beaune’s single vineyards, in vats of varying sizes that are perfectly adapted to the single vineyard approach that is typical in Burgundy. As for the other Côte-d'Or and Mercurey estates, the wines of the Pavillon will bear the certified “organic wine” label, starting with vintage 2018.

- On the nose, this wine offers notes of small red fruits embellished, without being dominated, by spicy or slightly smoky notes, which are also found in the mouth. Its great persistence of taste is based on the finesse and richness of sensations it can provide.

- Vinification
- The grapes are handpicked and ferments in temperature-controlled conical oak vats for 20 to 28 days. After that wine ages for 14 to 16 months in oak barrels of which 30% new.

- The Premier Cru Bressandes has a south-east exposure on a hill with a moderate slope.
