“La Moutonne” is a vineyard nestled in a natural amphitheatre at the heart of the Grand Cru sector of the historic age-old Chablis wine country. Its shape and ideal location make it a natural solar receptor. Sitting 95% in “Vaudésir” and 5% in “Les Preuses” (formerly owned by the Pontigny monks), “La Moutonne” is a monopole meaning Domaine Long-Depaquit is the sole owner. With its south/south-eastern exposure and a steep slope of almost 40%, this vineyard is protected from north winds.

Description & facts
Château Long-Depaquit, part of Albert Bichot, is located at the heart of the village of Chablis, in Burgundy’s Yonne department. A stroll through the estate’s grounds, which boast centuries-old trees and a rose garden, offers a unique, timeless experience. An exceptional 65-hectare legacy, our vineyards benefit from a sustainable approach to viticulture. Limiting yields and keeping interventions to a minimum during the vinification process help create authentic, mineral, elegant wines. Barrel ageing is used in moderation to best preserve the expression of each terroir. A new winery was built at the estate in 2014. Not only is it more eco-friendly, it also allows us to continue to improve the quality of our wines by giving them more purity and precision.

- The nose is evocative of fleshy fruit (peach, nectarine) with discreet citrus and floral notes (jasmine, violet). Full-bodied and generous on the palate with very distinct marly minerality due to the micro-terroir. Immensely fresh, light, and supple with hints of oak and exceptional length.

- Vinification
- The grapes are handpicked and ferments for 75% in stainless steel vats, 25% in 1 to 5 year old oak barrels. Afterwards the wine ages for another 10 months in oak barrels and vats, followed by another 6 months of ageing in stainless steel vats on it's fine lees.
