- The winemaker's favorite is to serve this champagne with beautiful earthy dishes with truffle and/or mushrooms. The champagne has an intense rich taste and therefore goes well with beautifully full dishes such as risotto or rich cheeses. Also great as an aperitif and with a nice full fish dish, preferably with a nice rich sauce.

- Vinification
- The harvest is done manually and then the vertical press membrane, "Cœur de cuvée" follows. The wine ferments on stainless steel. After bottling with liqueur de tirage the bottles age for 3 years in cellar before the disgorgement. The dosage is extra brut, 3g/l.
