- Vinification
- After the manual picking of the grapes, the fermentation, with the skins, takes place for a period of 20 days in arge steel barrels. The further maturation of the Brunello takes place for a period of 30 months in large oak barrels of 500 and 700 liters. The Brunello then refines for a few months in large concrete barrels before being bottled. In the bottle, the wine refines for another 18 months in the cellars of the domain.
