This wine is a Domaine du Pavillon “monopole”. It has the extremely rare distinction of possessing 2 different levels of appellation within the same 2 ha (5 acres) vineyard. "En Mareschaut" is derived from the Old French term “maresche” (marsh). The lower parts of Aloxe-Corton and Ladoix-Serrigny were marshy due to their proximity to the Lauve spring. Major drainage work was undertaken to dry up the land and make it suitable for planting vines. This grapes in this vineyard tend ripen early.

Description & facts
Domaine du Pavillon, part of Albert Bichot, is located south of Pommard, in the Côte de Beaune. The vineyards, winery, cellar, and 18th-century manor are surrounded by a wall. The estate’s 15 hectares of vines include nearly 4 hectares of our monopole Pommard "Clos des Ursulines". Just as at Domaine du Clos Frantin in Nuits-Saint-Georges, we practice organic viticulture with ongoing concern for the respect of the complex balances found in nature. The winery was modernized in 2016, so that we could vinify more of the Côte de Beaune’s single vineyards, in vats of varying sizes that are perfectly adapted to the single vineyard approach that is typical in Burgundy. As for the other Côte-d'Or and Mercurey estates, the wines of the Pavillon will bear the certified “organic wine” label, starting with vintage 2018.

- Our Corton Grand Cru Clos des Maréchaudes features well-balanced notes of vanilla and toast on the nose with nuances of raspberry. Starts off very round, rich and powerful, a harmonious combination of richness and the finesse of the terroir. The tannins are dense, mature and round. Very nice volume and length on the palate.

- Vinification
- The grapes are handpicked and ferments in temperature-controlled conical oak vats for 20 to 28 days. After that wine ages for 14 to 18 months in oak barrels of which 40-50% new.

- Clos des Maré-Chaudes is a Grand Cru vineyard in Aloxe-Corton, on hillsides. One of the sunniest single vineyards of the Corton hill.
