Tenuta di Ghizzano is a history-rich hamlet in Tuscany, deep in the rolling hills between the city of Pisa and de medieval town of San Gimignano. Near enough to the Mediterranean Sea to enjoy the mild sea breeze, and without extreme temperatures or great risk of springtime frosts. All the estate vineyards are planted on the sun-kissed hillsides, in the fissile-rich pliocene soils of Tuscany.

Description & facts
The Mimesi project from Tenuta di Ghizzano was born in Tenuta di Ghizzano, on the gentle hills of the Terre di Pisa, after a long period of research and experimentation and aims to give life to increasingly identity wines capable of faithfully translating nature, its perfection and its balance. Mimesi wants to show, starting from native grapes from long-lived vineyards, an authentic expression without superstructures, but with the finesse and elegance typical of great wines. Hence the choice of using the Drunk Turtle cocciopesto amphorae for the Sangiovese and the Tava terracotta amphorae for the Vermentino for aging, which guarantee the micro-oxygenation necessary to mature the wine by amplifying the aromas and bringing a real portrait of the territory.

- The attractive ruby red color of this 100% sangiovese is impressive. Aromas are subtle and insinuating, red and black berries, black pepper, violets, leather and liquorice. All are reprised on the palate, which shows exquisite balance The wine has a nice level of acidity, smooth and unobtrusive tannins. The finish is long and dry with some hints of bergamot and a mineral saltiness. Wine is remarkably elegant and complex and will definitely improve after decanting.

- This is a gastronomic wine. A selection of Italian salumi is synergistic. For something more substantial, a slow-cooked stew of organic Herdwick mutton with dumplings is outstanding. Alternatively, try wild mushrooms on toasted sourdough.
- Vinification
- The grapes are picked by hand, with an additional quality selection on sorting table before de-stemming, followed by vibration sorting of the individual berries. No machine crushing but only by human foot. The fermentation is done with ambient yeasts in concrete vasts. The maturation and refinement takes place for 14 months in Drunk Turtle cocciopesto amphorae, follwed by another 12 months of bottle ageing.
