About this wine
Description & facts
Our winery owns 4,5 hectares of vineyard which are located up on a hill in Valgatara, at an altitude of
200m, and Fumane, at an altitude of 500m, in the heart of Valpolicella Classica, North of Verona city.
The family managment, the passion and love for the land - handed down by father to son since many
generations - the knoledge of the territory and the choices of the local grape varieties planted - which
Corvina, Corvinone, Rondinella - are the keypoints of our wines. We are a small reality, who produces
high quality wines, in respect of the nature reducing at the minimum the use of chemial products.
We adopt, if necessary, the “thinning” of the excess grapes to keep high the grape quality. The
harvest is made only by hand and the grapes destinated at the production of Amarone and Recioto
are harvested in wood box, stored in our “fruttaio” and let them dry for 90-120 days. In 2019 we
subscribed to SQNPI, whic is a disciplinary similar to the biological one, so from the vintage 2019 we
can write it on the lable.

- Vinification
- Valpolicella Ripasso maybe has an even more unique way winemaking then the classical Amarone. Ripasso literally means ‘’to pass again’’. The skins of the grapes used for making Amarone wine, once the fermentation is completed, are filtered out of the wine, and added to a part of the classic Valpolicella wine made in September. These skins bring some sugar and yeast with them, and thereby a second fermentation occurs which takes about 15 days to end. This process gives to the wine Valpolicella more body, structure, and different kind of aromas. When the second fermentation is done, the wine ages in big barrels for 36 months.
