Located in the heart of the Côte de Beaune, Meursault is one of Burgundy’s flagship villages and among the most reputed. In fact, Meursault is often referred to as the capital of Burgundy’s great whites.
The "Les Charmes" Premier Cru is a first-class plot and easily rivals Burgundy’s great white Grand Crus. There are two types of "terroir" in Meursault. One is clay-based and produces opulent, generous wines. The other consists of finer soil, and is closer to the limestone bedrock. The latter gives a more mineral, airy and chiselled wine. Our plot, mostly located in the “Charmes Dessus” portion, is fortunate to overlie the two terroirs, and is therefore capable of producing particularly complex nectar.

Description & facts
Domaine du Pavillon, part of Albert Bichot, is located south of Pommard, in the Côte de Beaune. The vineyards, winery, cellar, and 18th-century manor are surrounded by a wall. The estate’s 15 hectares of vines include nearly 4 hectares of our monopole Pommard "Clos des Ursulines". Just as at Domaine du Clos Frantin in Nuits-Saint-Georges, we practice organic viticulture with ongoing concern for the respect of the complex balances found in nature. The winery was modernized in 2016, so that we could vinify more of the Côte de Beaune’s single vineyards, in vats of varying sizes that are perfectly adapted to the single vineyard approach that is typical in Burgundy. As for the other Côte-d'Or and Mercurey estates, the wines of the Pavillon will bear the certified “organic wine” label, starting with vintage 2018.

- Generous and flattering, this wine features notes of candied lemon, almonds, white flowers and freshly baked bread. The palate is smooth and velvety without any heaviness, with hints of warm brioche and spice. Long and tasty, the finish mirrors the bouquet’s aromas.

- Vinification
- The grapes are handpicked and 60% ferments in new oak barrels, the other 40% in stainless steel vats. After that wine (100%) ages for 12 to 15 months in oak barrels, of which 25% are new barrels.
