A verdejo with oak aging is not very common yet so surprising. This wine has aged for 8 months in new French oak barrels, with periodic bâtonnage in the barrel. This gives a completely new dimension to the verdejo wines. The grapes are harvested by hand at the Nieva area of Segovia in Castilla Y León.

Description & facts
Tómas Postigo is one of the most venerable winemakers in the Ribera del Duero with more than 35 vintages on its name. It was the first winery in Spain to obtain the “Ecological Carbon Footprint” award. They only use native yeasts with is the hallmark of the wines and gives it their own kind of personality. The process of winemaking is with lots of focus on handcraft: from harvest to aging.

- Tasting note
- The first aromas are noted by the toasted spices from the oak, later a more classical note of Verdejo comes forth; aniseed, fennel, white and stone fruit with a heaviness and depth mixed with notes of pastry. Great on the palate, deep and creamy, elegant and complex with a refreshing citrus balanced with the acidity. Deep, voluminous and structured, long and spicy aftertaste with a slightly acidic finish.

- Vinification
- Everything is harvested into 10 kilo boxes, reducing the bruising of the fruit. After staying in a cold chamber, the clusters to trough a selection proces done by hand. In the winery they moved everything gently using our gravity flow system. This prevents oxidation and ensures that the whole trape is intact. The grapes were de-stemmed and had whole berry
